Good refrences.
Look at the chef you admire and see how they started, you'll find the majority attended their local college studying catering. Some did'nt even do this they learnt their trade by basically learning on job so an evening job just washing dishes/basic food prep could be a start.
French would be helpful but not essential.

Universities do not do catering. You need to apply to a Catering College in the UK. Look up one in your area and see what grades you need.
